    Summary:[要旨] カットキャベツにおいて初発菌数からの微生物増加に影響を与える主要因は、貯蔵温度である。そこで我々は、初発細菌数と貯蔵温度を基にカットキャベツの細菌増殖の予測モデルを開発した。本予測プログラムは、増殖モデルのフィッティング用プログラムと、細菌の予測曲線描画プログラムで構成されている。細菌増殖データは、1°Cで15日間、5°Cで8日間、10°Cで4日間貯蔵したカットキャベツの一般生菌数から求め、フィッティング用プログラムで分析することで、増殖モデルとともに必要なパラメータの数値を得た。これにより、すべての温度区で細菌の典型的なシグモイド型の増殖曲線が得られた。カット野菜工場で製造されたカット野菜製品の初発菌数とフィッティング用プログラムから得られたパラメータの値を予測曲線描画プログラムに入力し、各貯蔵温度でのカット野菜製品の予測曲線を作成した。本プログラムは、カットキャベツ製品の細菌増殖を正確に予測できたが、カットキャベツミックス製品では精度の高い予測が得られなかった(Pr > 0.68)。このことから、今回作製した微生物予測プログラムは、1°C、5°Cおよび10°Cで貯蔵されたカットキャベツ製品の細菌増殖を予測するための有効なツールとなる。 [英文抄録] We developed a predictive model for bacterial growth in fresh-cut cabbage at a given initial bacterial count and storage temperature, since storage temperature could be a major factor that affects the microbial growth from the initial level. The predictive program consists of a fitting program for the growth model and a simulation program to describe the bacterial growth curve. Raw bacterial growth data were obtained from counts of mesophilic aerobic bacteria of fresh-cut cabbage stored at 1ºC for 15 days, 5ºC for 8 days, and 10ºC for 4 days, and then analyzed with a fitting program that gives the growth model with estimated values of parameters. This resulted in typical sigmoid growth curves of bacteria at all temperatures. When we input the initial bacterial counts of fresh-cut products processed in a commercial produce plant and the estimated values of parameters resulting from the fitting program into the simulation program, it gave the predicted bacterial growth curves of fresh-cut products at each storage temperature. The program precisely predicted the growth of bacteria in fresh-cut cabbage product, but not in fresh-cut mixed salad product including cabbage (Pr > 0.68). Therefore, our program would be a useful tool to estimate the bacterial growth of fresh-cut cabbage product held at 1ºC, 5ºC, and 10ºC. Departmental Bulletin Paper application/pdf
