    Summary:手つかず状態での食品の廃棄について、東大阪市の居宅サービス事業所を対象に質問紙調査を行った(配付数、309件、有効回収数、66件、有効回答率、約21%)。本稿では、手つかず食品を廃棄する原因やこれへの対応について、食品をよく扱っている担当者にたずねた結果を報告する。<br> 『同じ物を購入』『食べ忘れ』等、居宅サービスの利用者による原因だけではなく、家族が買ってきた食品と重複する等の家族との連携や、単価を下げまとめ売りされているものを購入した方が経済合理的である等、食品の販売単位、介護士の管理不足や調理サービスを含まない契約内容等をあげている回答があることを明らかにした。<br> 担当者からの働きかけは利用者個々の状況に応じて各々行われ、手つかず食品の廃棄については、ほとんどマニュアル化されていない。また、少数だが手つかずの状態で食品を廃棄することは減少している等の回答があることを明らかにした。

    Summary:手つかず状態での食品の廃棄について、東大阪市の居宅サービス事業所を対象に質問紙調査を行った(配付数、309件、有効回収数、66件、有効回答率、約21%)。本稿では、廃棄の経験や頻度、食品の種類、期限切れの食品をよく見かける利用者の傾向について概要を簡潔に報告する。<br> 「手つかず食品を廃棄した経験がある」とほぼ全ての事業所(63件)が答え、その頻度は、週2回の訪問で1~2個、週1回の訪問で2~3個が比較的多くみられた。「食品の種類」は、「もやし」「キュウリ」「牛乳」「なすび」等の生鮮食品が多く、特に「もやし」「キュウリ」「牛乳」は半数以上の事業所が廃棄した経験があると答えた。「期限切れの食品をよく見かける利用者の傾向」では、それぞれ要介護度が比較的軽い、認知症がみられる、女性という傾向となった。<br> 体が動き自分で買い物に出かけ調理をするが、買ったことを忘れる等に伴っての排出が示唆された。

    Summary:Food waste is a significant problem in Japan. To address this issue, restaurants can provide staffs with appropriate skills to minimize such waste. The purpose of this study is to quantify the proportion of franchise and privately run restaurants in Higashiosaka, Japan, that takes action to reduce food waste, and to compare the franchise chains with the privately run outlets. Questionnaires were mailed to 400 restaurants, chosen at random, in Higashiosaka; responses were received from 59 restaurants, or 14.8% of those surveyed. The study found that a higher proportion of privately run restaurants take steps to reduce food waste during cooking than the franchise restaurants. Privately run restaurants were found to reduce food waste by giving surplus food to their employees, using surplus food for other menu items, and using a larger amount of edible parts of the ingredients. No significant difference was observed in the others. In conclusion, the present study has demonstrated that the proportion of privately run restaurants reducing food loss at the cooking stage is significantly higher than that of franchise restaurants.専攻: 環境マネジメント
