    Summary:もろみ酢と、もろみ酢に大量に含まれるクエン酸について、単調な事務作業負荷による精神的な疲労(ストレス)に対する緩和作用を調べるために、疲労の主観的評価項目であるVASと唾液中のストレスマーカーであるクロモグラニンAを指標に用いて、一過性の作業ストレスに対する精神的疲労度を評価した。試験デザインは、ランダム化二重盲検プラセボ対照並行群間試験とした。スクリーニング検査には100名が参加し、51名を選抜した(もろみ酢飲料摂取群17名、クエン酸飲料群17名、プラセボ飲料群17名)。試験食品を2週間摂取後来院させ、その後、内田クレペリン検査によるストレス負荷を実施し、実施前後で唾液中のクロモグラニンA、VASによる主観評価、Chalder Fatigue Scale、POMS2を実施した。その結果、もろみ酢含有飲料およびクエン酸含有飲料を摂取すると一時的な作業による「疲労感」や「倦怠感」が有意に軽減された。また、唾液中のストレスマーカーであるクロモグラニンAにおいても、プラセボ飲料と比較してクエン酸飲料が有意に減少し、プラセボ飲料と比較してもろみ酢飲料においては、減少傾向が認められた。
